Unripe plantain is a firm, starchy green cooking banana with a neutral, potato-like flavour. It is widely used to make boiled plantain to serve with stews, or sliced thin and fried into crisp savoury chips. How to use: Cut off both ends and score the thick skin lengthways with a knife to make peeling easier.
