Garri powder is a fine, creamy flour made from fermented and roasted cassava tubers. It has a distinctly sharp, tangy flavour and a slightly coarse, sandy texture. Add hot water to quickly make a smooth swallow to serve alongside hearty soups, or soak it in cold water with sugar, milk and roasted peanuts for a refreshing, cereal-style snack. How to use: For a traditional swallow, slowly pour boiling water into the garri while stirring vigorously until it forms a firm, smooth dough.
